So how do you go about sharpening your knives. It's a relatively easy process, if you know what you're doing. But you definitely shouldn't be doing it without some prior instruction, or you could end up seriously injuring yourself. Here is your definitive knife sharpening guide.

While there are many knife sharpening gadgets on the market, we prefer to sharpen our knives the old fashioned way, which just happens to be the way most professional chef's prefer.

First of all, you'll need the right sharpening instrument, and that is a water stone. There are lots of different types of water stones available, so bring one of the knives from your set with you when you go to the kitchen supply store to show the clerk. The clerk will be able to direct you toward the correct wet stone for your knife.

When you get your stone and are ready to start sharpening, first soak the stone in water for 10 to 20 minutes, until water remains standing on the stone when you take it out of the soaking cup. Then, set the stone on a smooth, clean, solid surface and press the blade of your knife against it at a 15 degree angle.

The degree of angle may actually vary with the length of the knife, but a good rule of thumb is that the entire blade should lay along the length of the stone. Then, simply scrape the blade back and forth along the stone, alternating sides of the blade with each scrape. Keep a piece of paper nearby to test the sharpness of your knife, and keep scraping until you've reached the desired sharpness.

If the water stone doesn't appeal to you, you can buy a sharpening steel.

This is very easy to use. Just hold the steel pointing down with one hand and with your other hand hold the knife with the blade crosswise against the steel at a slight angle. Pull the blade back and forth against the steel, from end to end and alternate sides after each pull. As with the stone, keep doing this until your blade is sharp to your satisfaction.
